I am super excited to tell you that in 2012 we will have monthly meetings! We have the building every third Tuesday of the month. There are so many things we need to be learning, this will give us the perfect opportunity! It will also help us develop our friendships quicker, because we will see each other more often! Hope to see you there!

Gifts-in-a-jar Funnel Cake Mix

Funnel Cake Mix
4 C flour
3 T plus 1tsp baking powder
1 tsp salt
2 tsp cinnamon
In a bowl combine all ingredients, stir until mixture of well blended. Stirring sort of lifted the volume and gave me more than a quart jar of mix.  Place mix in a 1 quart jar.
On tag:

For 4 large or 6 smaller funnel cakes:
1 C funnel cake mix
1 egg
3/4 C milk
powdered sugar

Pour vegetable oil into a skillet to a depth of 1 inch. Heat oil to 360 degrees (I didn't have a thermometer so I tested with small drops of batter. When the batter turned golden brown it was ready) over medium high heat. In a bowl mix egg, milk, and 1 C mix with fork until smooth. Holding finger under funnel opening, pour about 1/4 cup batter into funnel. Remove finger from spout allowing batter to fall into hot oil in a circular motion to try to make a spiral shape. Cook for one minute flip to the other side and cook until golden brown. Lift out place on paper towel to drain and sprinkle with powdered sugar.
Mu funnel was a little small, so it was hard to get my batter going very well.
